Bel exploit !

Avec Gare au Gorille, Marco Cordonnier et Louis Langevin, ont reussi à retenir dans l’Ouest Parisien les inconditionnels de la liberté d’expression culinaire qu’offre les X et XI arrondissements de Paris. Ouvert en 2014, l’idée commence à prendre forme lorsque Marco glane de l’expérience dans des établissements qu’on ne présente plus. Il est de l’année de la première étoile à Ze Kitchen Galerie et également pour la première de L’Agapé, déjà dans le 17 eme . Il y fait la rencontre qui change et affine sa vision de la cuisine: Bertrand Grébaut. L’idée de l’ouverture du Septime est dans les airs mais cela attendra un an, le temps pour Marco d’apprendre d’un maître, à L’arpège. 2011, Il fait l’ouverture du Septime en tant que second. Il y rencontre Louis qui y est second de Théo Pourriat. L’un précise son idée de la cuisine, celle qu’il fera à La Gare au Gorille, tandis que l’autre découvre les vins natures. Pas facile: «  Au début, découverte, un peu comme tout le monde, tient c’est chelou, très intrigué, pas forcement à chaque fois emballé, alors que Théo débarquait : putain c’est super bon ce truc là. De fil en aiguille je suis passé uniquement au vin nature, je peux plus revenir en arrière, mais c’est vraiment au niveau de la dégustation, pas d’un état d’esprit général. La base du truc c’est le goût »

 

Cela prendra encore un peu de temps mais l’idée est est là et semble belle. Ouvrir un restaurant qui leur ressemble, simple en apparence en salle comme en cuisine mais extrêmement rigoureux . Se sentir à l’aise et ne même pas remarquer que le service est parfait. Le menu déjeuner change toutes les semaines en fonction de l’arrivage et de l’inspiration du chef. C’est simple – ce qui peut être l’adjectif le plus flatteur finalement – et ça twiste dans l’assiette. Niveau quille, le goût assuré de Louis donne une magnifique sélection: Vin orange La Stoppa de Ageno, Pierre chaude du domaine de L’Anglore ( Eric Pfifferling), Charme de Mister Robinot, Fledermaus ( Autriche ), La cuvée Feu de Belluard, La Sorga, en veux-tu, en voilà, Meursault Charme 1er cru de Fanny Sabre. Le coup de coeur de Louis: « Là j’adore les Guinechien de Benoit Courault dans la Loire, 100% Chenin blanc sur du schiste, ça te donne un truc minéral, vif et une fin de bouche un peu fumée avec une belle réduction, j’appelle ça une réduction minérale, top »

Marco et Louis ont réussi a créer un endroit simple avec une cuisine pointue et des vins de vignerons. Une adresse incontournable.

 

What an achievement !

With Gare au Gorille (‘Beware the Gorilla’, also the name of a song by famous French singer George Brassens), Marco Cordonnier and Louis Langevin have succeeded in preserving the unconditional freedom of creation which abounds in the 10th and 11th Parisian arrondissements.  Opened in 2014, the seed of the idea is sown a long time before, when Marco gains experience of the kind of establishments that you never hear mentioned these days. He’s there when the Ze Kitchen Gallerie, and the l’Agapé, already in the 17th arrondissement, earn their first star. It’s here that he meets the person who will change and refine his vision of cooking: Bertrand Grébaut. The approaching grand opening of the Septime is already in the air, but it will have to wait a year, during which Marco learns from a master, at the l’Arpège. 2011 marks the opening of the Septime with Marco as sous-chef. Here he meets Louis who works there as Théo Pourriat’s sous-chef.  Marco gradually defines his ideas on cooking, the ones he’ll put into practice at the Gare au Gorille, while Louis discovers natural wines. At first it isn’t easy :

You try it, and like most people, hmm it’s kind of weird, can’t say I’m mad about all of them, whereas Theo is right in there , shit, this stuff is amazing. One thing leads to another and all I’m into now are natural wines, I can’t turn back, but it’s really about the taste, it’s not a lifestyle thing. Ultimately it’s the taste that matters.

 

It’ll take a bit longer, but things, beautiful things, have been put in motion. They open a restaurant in their image: apparently straightforward, in the dining room as well as the kitchen, but extremely rigorous. Feeling right at home and not even noticing that the service is perfect.  The lunch time menu changes every week, depending on what ingredients are in and on the chef’s inspiration. It’s simple – which after all is perhaps the most flattering adjective – and it’s a party on the plate. Wine-wise, Louis’exquisite taste guarantees a wonderful selection : La Stoppa de Ageno, an orange wine, Pierre Chaude from the L’Anglore Domain (Eric Pfifferling), Charme de Mister Robinot, Fledermaus (Austria), La cuvée Feu from Beluard, as much La Sorga as you can drink,  Fanny Sabre’s Meursault Charmer 1er cru. Louis’s absolute favourite :

I adore Benoit Courault from the Loire’s Guinechien, 100% Chenin on shale, it’s got a mineral kick, and a smoky finish with a nice reduction, I call it a mineral reduction, it’s perfect.”

Marco and Louis have succeeded in creating an incomplex establishment with exacting cuisine and real wines from real wine-makers. An absolute must.
